.Peter's Leek + Bacon Quiche.

Sunday morning I ate the most delicious breakfast I HAVE EVER had the pleasure of eating.
Peter made it, so we'll call it this:
Peter's Leek, Bacon, & Cheese Quiche
Ohh and it was magical, so I thought I'd share.
Quiche is such a funny thing. Not only does the word make me giggle. The idea of an egg pie (which is essentially what it is) makes me kinda cringe.
But when you taste this delectable dish, you will crave it again, and again.
Trust me.
You will.
Peter's Leek, Bacon & Cheese Quiche

2 Deep dish pie shells (really you only need 1, but there's enough mix to make 2 pies)
3 Eggs
1/4 lb Back Bacon, sliced
3/4 lbs (about 3) Leeks, chopped (only the white and light green parts)
2 tbsp unsalted butter
3 oz (about 1 cup) Gruyere cheese, shredded
3 oz (about 1 cup) Italian Fontina cheese, shredded
3 oz (about 1 cup) Mozzarella, shredded
1/8 tsp grated nutmeg
1/4 tsp black pepper
1 3/4 cups Creme fraiche (mix 2 tbsp plain yogurt & 1 cup whipping cream together and let sit for 1 hour  if you can't find the real deal)
1) Pre-bake pie crust according to package instructions for 8-10 minutes (bake both pie crusts if you're making 2 quiche's as there's a lot of mix and we made 2 of them).
2) Meanwhile, cut leeks into small pieces, then wash well in a bowl of cold water. Lift out and drain leeks in a colander and pat dry. Melt butter in a 10-inch heavy skillet over moderately low heat and cook leeks, stirring occasionally, until very tender, about 8 - 10 minutes
3) Line warm pie shell with sliced bacon (or ham), overlapping layers as necessary to cover bottom and side of pie shell completely. Toss cheeses together and sprinkler evenly into into shell (do not pack cheese),  then spread leeks evenly on top of cheese. Whisk together eggs, nutmeg, and pepper until combined well, then whisk in creme fraiche until smooth.
4) Carefully pour half of custard on top of pie filling, gently moving cheese with a spoon to help custard disperse evenly. Slowly add remaining custard in same manner. Cover pie loosely with foil, gently folding edges over crust (keep foil from touching top of cheese mixture) and transfer to a baking sheet.
5) Bake @ 350F until center of filling if puffed and set (center with be slightly wobbly, but not liquid) about 1 1/4 to 1 1/2 hours. Cool on a rack at least 20 to 30 minutes (it will still set as it cools). Serve warm.

    Độn Thiên mỉm cười, khép hai mắt lại, tia sáng cuối cùng chậm rãi biến mất, qua đời.

    Một luồng tử kim khí từ giữa lông mày bay ra. Đột nhiên Tôn Hồn Phiên xuất hiện trên không trung, khẽ run lên một cái, luồng tử kim khí này nhập vào Tôn Hồn Phiên, biến mất không thấy.
