.Spicy Turkey Burgers.

Found this recipe on Epicurious. And it was one of the best turkey burgers we've ever had. No lie.
And I'm going to be making them again tonight for some family coming over. And it's my in-laws, who are like gourmet chefs {seriously....these people can cook. They know food!}, so you can see the amount of trust I have in these little suckers.

Spicy Turkey Burgers

1 1/4 pounds Lean Ground Turkey
1 cup mild Salsa, Divided
1/2 cup finely chopped Shallots
1/4 cup chopped fresh Cilantro
4 tbsp vegetable oil, divided
1 tbsp chipotle-flavored hot sauce (I used Siriachi sauce, which was tasty)
1 tsp ground Cumin
1 tsp Salt
1/2 tsp ground Black Pepper
4 Crusty Rolls
4 Lettuce leaves
4 slices Swiss cheese
Directions:
1) Mix ground turkey, 1/2 cup salsa, shallots, cilantro, 3 tbsp oil, hot sauce, cumin, salt and pepper in a large bowl. Shape turkey mixture into four 3 1/2 to 4 inch diameter patties.
2) Heat 1 tbsp oil in large non-stick skillet over medium-high heat. Add burgers; cook until brown, about 3 minutes per side. Reduce heat to low. Saute until burgers are cooked through, about 4 minutes, turning occasionally. Melt slice of swiss cheese on top.
3) Arrange roll bottoms on 4 plates. Place lettuce, then burgers on roll bottoms. Top each burger with 2 tbsp salsa, then roll tops.
